Ingredients
  

  • 1 lb Chicken thighs boneless, skinless, cut into pieces
  • 2 cups Carrots sliced
  • 1 cup Potatoes diced
  • 1 cup Celery chopped
  • 4 cups Chicken broth
  • 1 tsp Thyme dried
  • 1/2 tsp Salt

Method
 

  1. In a large pot, heat some oil over medium heat. Add chicken pieces and cook until browned, about 5 minutes.
  2. Add the carrots, potatoes, and celery to the pot. Stir to combine.
  3. Pour in the chicken broth and add thyme and salt. Stir well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes or until the vegetables are tender.
