Ingredients
  

  • 4 pieces chicken breasts boneless, skinless
  • 2 cups quinoa cooked
  • 1 cup cherry tomatoes halved
  • 1 cup broccoli florets roasted
  • 1 cup sweet potato cubed and roasted
  • 2 tbsp olive oil for roasting
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat the grill pan over medium heat. Season the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
  2. Grill the chicken for 5-7 minutes on each side, or until fully cooked. Remove from the pan and set aside to rest.
  3. While the chicken is grilling, preheat your oven to 400°F (200°C). On a baking sheet, toss the broccoli florets and sweet potato cubes with olive oil, garlic powder, salt, and pepper. Roast in the oven for 20-25 minutes, flipping halfway through.
  4. Once the chicken is cooked and the vegetables are roasted, slice the chicken and plate it with the roasted vegetables and quinoa. Add a few cherry tomato halves for a burst of color and freshness.
