Ingredients
  

  • 2 lbs chicken thighs skinless
  • 2 cups carrots sliced
  • 1 cup onions chopped
  • 4 cloves garlic minced
  • 1 cup potatoes diced

Method
 

  1. In a large Dutch oven, heat some oil and brown the chicken thighs on both sides.
  2. Remove chicken and set aside. In the same pot, sauté onions and garlic until fragrant.
  3. Add in carrots and potatoes, stirring to coat with the remaining oil.
  4. Return chicken to the pot, cover with broth, and simmer for 40 minutes until the chicken is cooked through.
