Ingredients
  

  • 4 large bell peppers red, yellow, or green
  • 1 cup quinoa cooked
  • 1 cup cooked chickpeas
  • 1/2 cup fresh parsley chopped
  • 1/2 cup tomato sauce
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. In a mixing bowl, combine the cooked quinoa, chickpeas, parsley, tomato sauce, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture, pressing gently to pack the filling in.
  5. Place the stuffed peppers in a baking dish, cover with aluminum foil, and bake for 30-40 minutes, or until the peppers are tender.
  6. Remove from the oven and serve hot with a squeeze of fresh lemon juice.
